Delish! Very easy to make. Only bean burger I've ever made that didn't fall apart and maintained a texture very much like a meat burger.

4 clovesGarlic; minced
1 largeOnion; finely chopped
1 tablespoonolive oil
1 mediumCarrot; shredded
1 teaspoonChili powder
1 teaspoonGround cumin
1 15-oz canPinto beans; rinsed and drained
1 15-oz canBlack beans; rinsed and drained
1 1/2 cupsQuick cooking oats
2 tablespoonsDijon mustard
2 tablespoonsSoy sauce
1 tablespoonKetchup
1/4 teaspoonPepper
8 leafsLettuce
8 tablespoonSalsa

Grilled Bean Burger Preparation

In a large nonstick skillet coated with cooking spray, saute onion and garlic in oil for 2 minutes. Stir in the carrot, chili powder and cumin; cook 2 minutes longer or until carrot is tender. Remove from the heat; set aside.

In a large bowl, mash the pinto beans and black beans. Stir in the oats. Add the mustard, soy sauce, ketchup, pepper and carrot mixture; mix well. Shape into eight 3-1/2-in. patties.

Coat grill rack with cooking spray before starting the grill. Grill patties, covered, over medium heat for 4-5 minutes on each side or until heated through. Serve on buns with lettuce and salsa.

Notes

Loved the texture, closest to a real burger I've ever made! It did not fall apart and grilled very easily. LOVE LOVE LOVED IT!

    Last time I made these burgers I also added breadcrumbs which meant they didn't fall apart on the BBQ.
