1 smallonion; diced
3 ribscelery; diced
1/3 cupbutter / oil
1/3 cupFlour
3/4 cupmilk
3/4 cupchicken broth
2 cupscooked chicken; diced
1 cupFranks Hot Sauce- to taste
6 ozVelveeta®; cubed
1/4 cupBlue Cheese
1/2 tspcayenne pepper
1/2 tspcelery salt
1/2 tspgarlic salt

Buffalo Chicken Soup Preparation

In a 2-quart saucepan over medium-high heat, saute onions and celery in butter until tender.

-Stir flour into pan; slowly whisk in milk and broth. (roux)

-Stir in remaining ingredients and simmer over medium-low heat, stirring occasionally, until the cheese has melted.

Very good. I found it a little thick to be soup though, and ended up dipping corn chips in it. Yummy!

I actually liked this better the next day after the flavors had a chance to marinate in the fridge. If I made it again, I might try to find a substitute for the Velveeta. Pairs well with Easy Breakfast Potatoes--give it a shot!
