Great Summer Salad
"This made a lot of salad! I didn't have avocado but I added some diced tomato. Next time I might garnish with the basil instead of adding into recipe since the basil has turned black but otherwise this is great!" - QuerianYield: 5 Ready in 45 minutes

| 1 cupsweet corn; fresh or frozen |
| 1/2 cupGreen pepper; diced |
| 1/2 cupRed onion; minced |
| 1 15-oz canGarbonzo beans; drained |
| 1 largeCucumber; peeled and diced |
| 1/4 cupParsley; minced |
| 1 cupBasil; fresh |
| 1 Avacado; diced |
| 1 Dressing |
| 1/4 cupLime Juice |
| 1.5 tablespoonExtra virgin olive oil |
| 3 tablespoonVegetable broth |
| 1/2 tspSalt |
| 1/8 tspGround pepper |
| 1 cloveGarlic |
| 1/2 tspChili peppers |
Quinoa Salad Preparation
Cook Quinoa (with 2 1/4 cup water) and allow to cool. Combine all vegetables in a large bowl. Add the quinoa and mix. Whisk the dressing ingredients together (lime, EVOO, veg broth, salt, pepper, garlic, chili pepper).

This is one of my favorite summer salads. I had two recipies for quinoa salad and I combined them into this one that has all my favorites in it!
