|1 cupsweet corn; fresh or frozen|
|1/2 cupGreen pepper; diced|
|1/2 cupRed onion; minced|
|1 15-oz canGarbonzo beans; drained|
|1 largeCucumber; peeled and diced|

|1/4 cupLime Juice|

Quinoa Salad Preparation
Cook Quinoa (with 2 1/4 cup water) and allow to cool. Combine all vegetables in a large bowl. Add the quinoa and mix. Whisk the dressing ingredients together (lime, EVOO, veg broth, salt, pepper, garlic, chili pepper).
This is one of my favorite summer salads. I had two recipies for quinoa salad and I combined them into this one that has all my favorites in it!
