| 3 tablespoonsLemon juice; (juice from 1/2 of a lemon) |
| 1 teaspoonGround cloves |
| 1 1/2 tablespoonsCornstarch |
| 2 tablespoonsWater |
| 8 poundsHam Shank |
Passion Orange Ham Glaze Preparation
Preheat oven to 325 degrees. Place ham in a large baking pan lined with heavy foil. Cover with foil and seal tightly. Roast for about 2 hours or until internal temperature reaches 140 degrees. Spoon some glaze over the ham and return to the oven uncovered for 15 more minutes.
For glaze: Combine juice concentrate, brown sugar, lemon juice, and ground cloves in a medium sized saucepan. Bring to a boil over medium high heat. Combine cornstarch and water (slurry). Gradually add to the boiling sauce, stirring and adding just enough cornstarch slurry to get to the consistency you desire. Thinner is better.
To serve, slice ham and arrange on a serving platter. Spoon sauce over the ham just before serving.
