One of my best soups

"Super yummy soup. Left out the Cayenne, substituted smoked paprika and chipotle chile pepper, substituted roasted coriander for regular. Added the juice of 2 whole limes, and used leftover taco shells (ground up medium fine) as a thickner to reduce the salt. I used 5 cloves or garlic, and a whole sweet onion and about 1/3 cup of frech cilantro. Served with tortilla strips, shredded cheddar, sour cream, scallions, and fresh lime juice to taste...accompanied by homemade Guacamole and chips...everybody including the kids LOVED it!" - Dillardcvg

1/4 cupolive oil
1 tablespoonCumin
1 tablespoonPaprika
1/2 teaspoonCayenne pepper
1 teaspoonCoriander
1 Bay leaf
6 clovesGarlic
2 cupsOnions; minced
2 tablespoonsSalt
3 tablespoonsCilantro; chopped
6 cupsChicken Stock
4 cupsTomatoes; chopped
1/2 poundchicken breast; cooked and cut into strips or chunks
1 largeavocado; peeled and cubed
1/2 cupmonterey jack cheese; shredded
1/2 cupCheddar cheese; shredded
2 cupstortilla chip; crumbled

Chicken Tortilla Soup Preparation

heat olive oil and add half the tortilla chips and all the spices except the cilantro. Saute for two minutes and then add the garlic. Saute one minute and add the onion. Saute 3 minutes and add the salt and 2 tablespoons cilantro. Saute 2 minutes and add the stock and tomatoes. Simmer for at least a hour

Just before serving add the chicken and simmer for 15- 30 minutes. Add the avocado and cilantro and serve. Garnish with the cheese and remaining tortilla chips. You can also add the avocado from the side for picky eaters.

This soup can be spicy for the feint of heart. It definitely has a side kick. You can cut down on the amount of spices to cool down the heat but it wont taste as good.

This was amazing! I live in a city where Mexican food is everywhere and have ordered tortilla soup many times and me making this recipe was better than a restraunts! It could do without the salt just depends on your prefrence. I recommend saving the salt till the end and tasting before adding salt and adding the amount of salt you want. But this still is the best

Awesome recipe! The only thing I did differently was reduce the amount of salt from 2 Tbsp. to 1-1/2 Tbsp. Served with cornbread muffins, the whole family loved it :-)

Stripping the chicken makes ugly pieces, but I would recommend getting some dark meat into the mix on this. Really added flavor.

PERFECT! Sooo tasty. Followed the recipe, but used homemade chicken stalk, a little less salt, and squirted half a lime into each bowl. I'm sure it will be requested again soon.

Instead of canned chicken stock, I used the leftovers from two whole chickens from the night before. I boiled everything, bones, wings, everything except the skins, which I gave to the dogs. We added Rotel, Fire Roasted Tomatoes and black beans. I also shredded 4 flour tortillas and mixed that with some soup in the Cuisnart. Made all the difference.

I would NOT use 2 tablespoons of salt in this recipe. If I made it again, I would omit the salt and add a can of black beans. I would add sour cream on top also. And squeeze lime on top too.

Very good. FYI - if you are trying this recipe for the first time, consider these modifications: I added some salsa.. and I sautéed the tortillas till they were dark (not burnt) which added some extra flavor and I also added salt.
