This is an amazing concoction I came up with one day that can be served hot or cold! No need for salt or pepper!
Yield: 5 Ready in 40 minutes

| 6 mediumavocados |
| 0.5 sweet yellow onion |
| 1 7-oz canGreen Giant White Shoepeg Corn |
| 1 15-oz canblack beans; rinsed |
| 1 boil-in-bag brown rice bag; cooked |
| 1 15-oz canHatch Select Green Chile Enchilada |
Tex-Mex delight Preparation
1. Cut avocados, tomatoes and onion into small pieces
2. Mix them together. Make sure to gently mix it because of the avocados.
3. Rinse the black beans and add the black beans and corn into the mix.
4. Add the brown rice and enchilada sauce into the mix and stir gently.
