Freaking corn bread.
"This is the THIRD time making it but this time I made them into mini-muffins for Thanksgiving dinner. I only cooked them for 10 minutes and one batch will make 24 mini-muffins. So far all my taste-testers thought they turned out better than the regular "pan" version :-)"- crazy_cat_lady

Jenni1954 1 year agoThis recipe is almost exactly the same as my family recipe for cornbread. The only difference is that my recipe calls for 4 tsp. baking powder rather than 3. This is my go-to cornbread - very tender and somewhat sweet. In fact, it is baking in my oven right now!
