Corn Bread
Freaking corn bread.
"This is the THIRD time making it but this time I made them into mini-muffins for Thanksgiving dinner. I only cooked them for 10 minutes and one batch will make 24 mini-muffins. So far all my taste-testers thought they turned out better than the regular "pan" version :-)" - crazy_cat_ladyYield: 4 Ready in 35 minutes

| 1 cupscornmeal |
| 1 cupsflour |
| 1/4 cupssugar |
| 3 tspbaking powder |
| 1 tspsalt |
| 1 egg |
| 1 cupsmilk |
| 1/4 cupsVegetable oil |
Corn Bread Preparation
Combine dry ingredients. Add milk, oil and egg. Stir slightly. Pour into 9" pan ( or 8" for thicker bread). Bake in 425 F oven 20 - 25 minutes. Serve hot!
