Freaking corn bread.

"This is the THIRD time making it but this time I made them into mini-muffins for Thanksgiving dinner. I only cooked them for 10 minutes and one batch will make 24 mini-muffins. So far all my taste-testers thought they turned out better than the regular "pan" version :-)" - crazy_cat_lady

Original recipe makes 4
1 cupscornmeal
1 cupsflour
1/4 cupssugar
3 tspbaking powder
1 tspsalt
1 egg
1 cupsmilk
1/4 cupsVegetable oil

Corn Bread Preparation

Combine dry ingredients. Add milk, oil and egg. Stir slightly. Pour into 9" pan ( or 8" for thicker bread). Bake in 425 F oven 20 - 25 minutes. Serve hot!

    Couldn't add anything other than I'm glad to see this can also be made with whole wheat flour.

    This recipe is almost exactly the same as my family recipe for cornbread. The only difference is that my recipe calls for 4 tsp. baking powder rather than 3. This is my go-to cornbread - very tender and somewhat sweet. In fact, it is baking in my oven right now!
