A Delicious creamy soup. Fattening and delicious but easy enough to alter into a lower fat version. Very simple recipe and a crowd pleaser!
Peel and cook potatoes until sofetened. drain a little water away to ensure proper thickness of soup. Chop bacon and crisp then drain. When potatoes are softened lower heat and add cream, sour cream, a little bacon (set remainder aside for topping). When the are well incorporated turn off heat and add butter to melt. stir in melted butter and ladel into bowls. Add green onions and bacon to taste and enjoy!
I also add chees sometimes and to lower fat I use half the butter , light sour cream and whole milk.
