Pina Colada Zucchini Bread

This is a delicious sweet, flavored bread that can be made in a loaf or as muffins. For a lower fat version (and still totally delicious and moist!) substitute the oil with applesauce.

3 cupsSugar
4 Eggs
1.5 cupsoil
2 teaspoonsbaking powder
1.5 teaspoonsSalt
1 teaspoonbaking soda
1 teaspooncoconut extract
1 teaspoonrum extract
1 teaspoonvanilla extract
3 cupsshredded zucchini
1 cupcrushed pineapple; (drained)
0.5 cupWalnuts; chopped

Pina Colada Zucchini Bread Preparation

Combine the flour, sugar, baking powder, baking soda and salt. In another bowl, mix the eggs, oil and extracts. Stir into dry ingredients. Add zucchini, pineapple and walnuts. Grease and flour the bottom of the pan and line with waxed paper (or use cupcake papers in a muffin tin). Add mixture to pan and bake at 350 for 45 - 55 minutes or until a toothpick comes clean. Cool for 10 minutes before removing from pan.

This recipe will fill three 8x4" pans or about 24 muffins.

I have substituted the 1.5 cups of oil in the recipe with 1 cup applesauce and 1/2 cup oil for a lower fat version and it was delicious! [I posted this recipe.]
