Original recipe makes 6
20 ounceTurkey Italian Sausage; casing removed
2 cupsOnion; chopped
1 cupcarrots; diced
2 cupsMushrooms; sliced
2 tablespoonsGarlic; minced
4 cupsChicken broth
1 16-oz canTomatoes; stewed, italian style
1 can (10 oz)Tomato sauce
1 cupPenne pasta
2 cupsSpinach; fresh, chopped

Lasagna Soup Preparation

Brown sausage in a large saucepan over med-high heat. Add onions and carrots; saute 3 minutes. Stir in mushrooms and garlic, saute another 3 minutes. Add broth, stewed tomatoes, and tomato sauce; bring to a boil. Drop in pasta and simmer until cooked, about 10 minutes. Stir in spinach and cook until wilted.

This can be served in a bread bowl and a tbsp. mozzarella cheese in the bottom. Sprinkle with parmesan cheese and fresh diced basil. Really good!
