Original recipe makes 30
1/2 cupgranulated sugar
1/2 cuppacked brown sugar
1/2 cuppeanut butter
1/4 cupbutter; softened
1 egg
2 tablespoonshoney
1 1/4 wholewheat flour
3/4 teaspoonbaking soda
1/2 teaspoonbaking powder
1/4 teaspoonsalt
granulated sugar; Additional

Healthier Peanut Butter Cookies Preparation

Heat oven to 375ºF. In large bowl, beat granulated sugar, brown sugar, peanut butter and butter with electric mixer on low speed until well mixed. Beat in honey and egg until well blended. Beat in remaining ingredients until dough is formed.

Shape the dough into small balls (about 1 1/4 inch). Place them about 3 inches apart on ungreased cookie sheets. Flatten using crisscross patter with fork dipped in additional granulated sugar.

Bake 7 to 9 minutes or until lightly browned. Cool for 1 minute and remove from cookie sheets to cooling rack and cool for another 15 minutes.

Meh. Really sugary grainy not enough pb flavor. Easy to scorch bottoms no matter how high the rack was. Ok.

Thought they were great. Since it was my first time I used 1 cup ww flour and 1/4 cup white. Don't think anyone would know that they are made with ww flour.

Absolutely delicious, but tasted a bit different. I added some butterscotch chips as well as chocolate ones and they were amazing! The aftertaste just make should want more, they won't last long. :)

If you want cookies with even less fat content, you can use reduced-fat peanut butter instead of regular. [I posted this recipe.]
