Pickled Beets for Diabetics Preparation
Layer beets and onions in a heat proof bowl. In a small sauce pan bring the reserved beet liquid, vinegar, sweetener and cloves to a boil, reduce heat and simmer for 1 minute. Pour hot liquid over beets and onions, cover and let flavors develop for an hour. Serve

For health reasons I use low sodium beets and do not add salt but certainly if you can use it the recipe would only benefit from a healthy pinch. [I posted this recipe.]
