A great way to start the day and to surprise your loved ones with a sweet, yet healthy breakfast.
"I like to play around with this recipe. I found "lite" bread, so I went ahead and added more calories in the stuffing: 1 oz blueberries per serving and 14g white chocolate per serving; it was decadent. I also added a sprinkle of Splenda and cinnamon on top of the spread cream cheese before putting the fruit and chocolate on top. This recipe gets better every time." - pineapplebutterYield: 4 Ready in 40 minutes

Blueberry and White Chocolate Stuffed French Toast Preparation
In a large bowl, whisk together the eggs, milk and vanilla and set aside. Spread 1 tablespoon of cream cheese on 4 of the pieces of bread. On top of each creamed slice, sprinkle 1/4 of the blueberries and 1/4 of the white chocolate chips. Cover each with another piece of bread to make a "sandwich".
Spray a large nonstick skillet with cooking spray and turn heat to about medium heat. Carefully dip each of the "sandwiches" into the egg mixture until moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted. The inside may still be a bit moist due to the fruit and cheese spread but this just adds to the deliciousness in my opinion, but play around to get the right crispness for you.
Put onto serving plates, I like to cut each in half for presentation, and top each "sandwich" with 1/2 Tbsp of maple syrup. This may not sound like much, but the fruit already gives a moistness to the dish and you only need the slightest bit of sweetness from the syrup. If you aren't watching your weight, then drizzle that on!
