"I like to play around with this recipe. I found "lite" bread, so I went ahead and added more calories in the stuffing: 1 oz blueberries per serving and 14g white chocolate per serving; it was decadent. 8 sliceswhole wheat bread
2 Eggs
2 egg whites
1 cupskim milk
0.5 tspvanilla extract
4 tbspreduced-fat or fat free cream cheese
0.5 cupfresh or frozen blueberries
2 tbspwhite chocolate chips
1 cooking spray
2 tbsppure maple syrup

Blueberry and White Chocolate Stuffed French Toast Preparation

In a large bowl, whisk together the eggs, milk and vanilla and set aside. Spread 1 tablespoon of cream cheese on 4 of the pieces of bread. On top of each creamed slice, sprinkle 1/4 of the blueberries and 1/4 of the white chocolate chips. Cover each with another piece of bread to make a "sandwich".

Spray a large nonstick skillet with cooking spray and turn heat to about medium heat. Carefully dip each of the "sandwiches" into the egg mixture until moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted. The inside may still be a bit moist due to the fruit and cheese spread but this just adds to the deliciousness in my opinion, but play around to get the right crispness for you.

Put onto serving plates, I like to cut each in half for presentation, and top each "sandwich" with 1/2 Tbsp of maple syrup. This may not sound like much, but the fruit already gives a moistness to the dish and you only need the slightest bit of sweetness from the syrup. If you aren't watching your weight, then drizzle that on!

This was a quick easy recipe. I think next time though I will use some sort of a cheesecake filling. Instead of maple syrup I made a blueberry sauce with fresh blueberries. Powdered sugar on top.

Pretty good, I think I put too much cream cheese on it ( I eyeballed the amount) but it was very good, I added some nutmeg and cinnamon to the egg mixture. Tasted great! This recipe a nice twist to one of my favorite breakfast foods.

my (11 & 14) kids didn't like them. I wasn't crazy about them. I think it was the heated cream cheese. I enjoyed the fresh fruit. I think, ill stick to added the fruit after the French toast is prepared. thanks
