| 1.5 cupscorn meal |
| 1.25 cupswhole wheat floor |
| 1.25 cupsground flaxseed |
| 2 tbspbaking powder |
| 1.25 cupsSplenda® |
| 2 tsplite salt |
| 1.5 cupswalnuts or pecans; chopped |
| 3 cupsbuttermilk |
| 0.5 cupcanola oil |
| 1 cupegg substitute; or 5 eggs |
| 1 tspAlmond extract |
Flaxseed Corn Meal Muffins Preparation
Heat oven to 400 deg
Grease muffin pan liberally
Mix dry ingredients
Add liquid ingredients to dry, mix well
Fill each muffin well 3/4 full
Bake about 30 minutes
