Original recipe makes 6
1/2 poundstewing beef; or a small eggplant
1 14-oz canwhole tomatoes; (14 oz)
2 tbsplemon juice
1 tspchili powder
1/4 tspground cumin
2 tbsppeanut oil
1 mediumOnion; chopped
1/2 cupbeef broth
1/8 tspcrushed dried red pepper
1/2 tspSalt
1 15-oz canred beans; drained
1 10-oz packagefrozen cut okra
1 cupfresh spinach; chopped

African Style Stew Preparation

Brown beef or eggplant cubes in peanut oil, part-way add chili powder, cumin, and lemon juice

Add all other ingredients EXCEPT okra and spinach, simmer covered 30-40 minutes

Add okra last 5 minutes, and spinach last 2 minutes
