Healthy Cuban Chicken and Rice

Easy low salt Cuban chicken dinner. Best made ahead of time and re-heated. Very flavorful and loaded with veggies.

"I used stewed tomatoes with onion, green pepper, and celery (in the tomatoes)' added 1 cup chicken stock (Better Than Bullion brand)' used 2 cups orange juice, 1/4 cup lime juice, and browned the chicken with one entire head minced fresh garlic and a little oil ( didn't have onion or green pepper handy). Ingredients

1 pound chicken; boneless, skinless, cubed
1 large chunks (bite size)
1/2 large chunks (bite size)
1 teaspoon garlic; minced (like comes in a jar)
1 can stewed tomatoes
3/4 cup orange juice
1 cup sour orange; (instead of orange and lime)
1 teaspoon cumin
1/2 teaspoon chili powder; low salt
1/2 can French cut green beans; no salt added
1/2 can carrots; no salt added
2 bag brown rice
1/2 can sweet peas; no salt added
1/2 can corn; no salt added
1/2 teaspoon ginger

Preparation

I like to saute the peppers, onions and garlic and brown the chicken a bit first. But you don't need to. Put all ingredients except last 4 in a large pan. Cover and bring to a boil. Boil for 10-15 minutes. Then put on low and simmer for at least a couple hours. Can be served now or for better flavor, cool then refrigerate and re-heat later. Before serving, prepare rice per box instructions. Add corn, peas and ginger. Serve chicken mixture over rice mix.

This recipe was rather difficult to follow, but it was not too bad overall. I had to guess what was the pepper and how many onions, but I am pretty sure that it's a result of bad formatting. I added more salt than was called for and it was liked well enough by my friends, although some were sure there were too many veggies!

There are a couple of ingredients missing. Would be nice to know what they are.

I have no idea what sour orange is so I used lime instead. Next time I am going to use less orange juice and a little more lime to make it less sweet. I also put roasted poblano peppers in and used chicken stock to thin and put in a little ghost chili. You can use red pepper flakes instead or whatever works for you. Quite tasty. Sweet and sour a little heat wa good.
