Original recipe makes 4
4 medRed Potatoes
3 tablespoonsButter or Smart Balance Spread
0.5 cupParsley; Finely chopped
1 salt and pepper; to taste

Yvette's Parsley Potatoes Preparation

Wash potatoes and cut into bite size chunks. (Do not peel)Boil potatoes until fork tender. In the mean time, chop parsley and set aside. When potatoes are done, drain water (using lid) from pot. Add butter, salt, pepper and parsley and combine gently with fork or spatula. Cover and let rest for a few minutes before serving.
