This is the best soup for those cold winter days! Ah, it's good anytime, too!!

"I was more unprepared to make this than I thought, so I had to make some alterations. Didn't have any jalapeño or bell pepper so I added celery, mushrooms and some left over peas just 'cause my husband and I like them and 1 & 1/2 tsps of red pepper flakes. Whew! Didn't need the paprika after that. Also substituted 2 tbsps of gluten free flour. Loved it! Tasted a lot like Marie Calenders potato & cheese soup. Thanks!!" - Mrsswill

1 1/2 cupWater
2 cupsPotato; cubed & peeled
2 smallCarrot; (about 1 cup)
1 eaOnion; chopped
1/4 cupBell pepper; chopped
1 eaJalapeno peppers; seeded & chopped
1 cloveGarlic; minced
1 tablespoonBeef bouillon
1/2 teaspoonSalt
1 poundGround beef; cooked & drained
2 1/2 cupsmilk
3 tablespoonsAll purpose flour
8 ounceCheese; american, cubed
1/4 teaspoonCayenne pepper
1/2 poundBacon; cooked & crumbled

Spicy Cheeseburger Soup Preparation

In large saucepan, combine the 1st nine ingredients; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. Stir in beef and 2 cups milk; heat through.

Combine flour and remaining milk until smooth; gradually stir it into the soup. Bring to boil; cook and sttir for 2 minutes or until thickened and bubbly. Reduce heat, and stir in the cheese until melted. Add cayenne if desired. Top with bacon just before serving.

    This was pretty tasty....both my daughter & picky husband said they would eat again. We all had seconds so there were no leftovers. Mmmm! Good stuff on a chilly day.

    Wow this soup was so good! Absolutely no leftovers, we were full but still kept eating it! I didn't add any carrots to mine, and put some extra cheese and it was fantastic. Very spicy as well, I was surprised. Will be making this a lot for sure.

    absurdly delicious. I augmented the recipe a bit and used one and a half cups half and half plus one cup milk. still came out wonderfully.

    I would make this again. My husband ranked this as his 2nd favorite soup (and I have a LOT of really good soup recipes). One thing I might try next time is making a roux of the flour with a little butter to give it a fuller flavor, instead of adding the raw flour with the milk. Overall, though, great recipe. Thanks for sharing!

    Was a little worried about it but it was very good, I left out the carrots and bell pepper because my family does not like them and II served it with a crusty bread.

    This is a fantastic recipe! I made it a couple of weeks ago for my husband who wasn't too keen on the idea of soup for dinner but we both loved it. It was easy and so tasty. So fabulous I'm making it again tonight!
