Chicken breasts dipped in garlic butter with Cheddar bread crumbs is very yummy and you will NEVER have any leftovers!

I was skeptical that the cheddar would not compress and stay in the bottom of the bowl, but but after it was mixed in with the bread crumbs and Parmesan, it stayed loose and adhered to the chicken just fine. Ingredients

2 tablespoons Butter; melted
1 clove Garlic; minced
3 tablespoons Bread crumbs; (italian style)
2 tablespoons Parmesan cheese; grated
6 tablespoons Cheese; (colby-jack) shredded
1/12 teaspoon Dried parsley
1/12 teaspoon Dried Oregano
1/12 teaspoon Pepper
1 pinch Salt
2 ea boneless chicken breast halves; (pounded thin)

Preparation

Preheat oven to 350? f. (175 degrees C).

Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.

In a shallow bowl, mix together the Parmesan cheese, shredded Colby-jack cheese, italian bread crumbs (or plain), parsley, oregano, salt and pepper.

Dip each chicken breast in the melted garlic butter to coat, then press into the bread crumb & cheese mixture. Arrange the coated chicken breasts in a 9x13-inch baking dish. Drizzle with remaining butter and top with any remaining bread crumbs.

Bake about 30 minutes or until the chicken is no longer pink and juices run clear.

Notes

The original recipe was for 8 servings but I scaled it down since there is just 2 of us. Also, the original recipe called for regular bread crumbs and cheddar cheese.
