PREP TIME: 15 min READY IN: 45 min Ground beef is a staple in our kitchen and bakes up very tasty in this great casserole when topped with the cheesy mashed potatoes.

"Took me about 45mins to make becuz of my timing. I added green peppers, onion powder as well as the chopped onion, I used cream corn becuz I picked up the wrong kind shopping also xtra cheese two bags and overall it was great. Came out really good. Reminds me of baked ziti with a few adjustments. "

1 10.75-oz canCampbell's Tomato Soup
1 12-oz canCorn
1 1/3 cupsWater
2 tablespoonsButter
1/2 cupmilk
1 1/3 cupsPotato
1 eaEgg
1/2 cupCheddar Cheese

Potato Hamburger Casserole Preparation

Heat oven to 350 degrees F. In a large skillet, cook ground beef and onion until beef is thoroughly cooked; stirring frequently. Drain. Stir in 1/2 teaspoon of the salt, pepper, corn and soup. Spoon into ungreased 1 1/2 quart casserole.

In medium saucepan, bring water, butter and remaining 1/4 teaspoon of salt to a rolling boil. Remove from heat. Stir in milk and potato flakes with fork and mix until potatoes are of desired consistency. Stir in the egg until well blended.

Spoon potatoes in mounds over beef mixture. Sprinkle the cheese over all. Bake at 350 degrees for 25-30 minutes or until thoroughly heated.

TIPS: Frozen (thawed), or canned green beans can be added to the beef mixture with the soup. Use about 1 1/2 cup of vegetables.

Notes

I prefer Mexicorn over regular corn and SHARP cheddar cheese. I also use Campbell's Healthy Request Tomato Soup to cut the sodium content. Bacon bits may be added to the casserole during the last few minutes of cooking, if desired.

This recipe is The BOMB! But along with the corn I also add peas, green beans and an extra egg or two to hold it all together! It's the only way I can ge my 20 and 22 yr olds to eat vegetables! They love it!

We loved it, a definite keeper!!!! Very easy and great taste. Super for a busy night. I added red and green pepper to the beef when I browned it and I doubled the cheese.

This was so simple and delicious! I started with a tablespoon of butter and caramelized the onion with a clove of garlic before adding and browning the meat. Important to remember to add the egg it really makes a difference!!
