My husband doesn't care for cheesecake but since he loves coconut so much he also loves these bars!

PREP TIME: 10 min READY IN: 2 hours 20 min
Preheat oven to 350 F.
In a small bowl, combine sugar, egg and cream cheese; beat until smooth. Stir in the coconut.
Remove half of the cookie dough from wrapper and press half of the dough in the bottom of a 8" or 9" square pan. Spread the cream cheese mixture over dough. Combine and sprinkle remaining half of cookie dough over cream cheese mixture.
Bake at 350 F. for 35-40 minutes or until golden brown and firm to the touch. Cool for 30 minutes.
Refrigerate at least 1 hour or until chilled. Cut into bars and serve chilled.
The only part I dislike is they don't last very long and I have to make more!

moshnroll33 4 months agoMake sure you really do a good job greasing the pan with butter or spray or it will stick. Also def will use double the cookie dough next time.

Lbaer722 8 months agoUsed a dry cookie mix I had in the pantry and toasted the coconut. Baked in a loaf pan for taller bars and cut after refrigerating over night. Very good but very sweet

Missnyg1980 1 year agoHave made this twice now, everyone loves it so much theres never any leftover. Only suggestion--I buy the larger roll of cookie dough . I find I don't have enough to cover the bottom of the pan and crumble over the entire top

TwistedMAJOR 2 years agoi really liked this... altho i made a package of chocolate chocolate chunk cookie dough instead...... and would only use 1/2 cup of coconut even tho i love coconut!!!
drouchea 2 years agoVery few ingredients. Very simple instructions. Very easy to make. Very delicious! I did add some mini chocolate chips to the cream cheese filling.
