| 3 cupsRice; cooked |
| 2 southwestern chicken strips; (6 ounce packages) fully cooked and diced |
| 1 16-oz canV8 vegetable juice; (16 ounce can) |
| 1 15.25-oz canwhole kernel corn; (15 1/4 ounce can) undrained |
| 1 1/2 cupssalsa |
| 1 4-oz candiced green chilies; (4 ounce can) undrained |
| 1/2 cupgreen onion; chopped |
| 2 tablespoonsfresh cilantro; minced |
| TOPPINGS |
| 4-cheese Mexican blend cheese; shredded |
| chopped green onion; additional |
| fresh cilantro; minced |
| tortilla chips; crushed |
Spicy Chicken Rice Soup Preparation
1In a large pot, combine first 9 ingredients. Bring to boil. Reduce heat; cover and simmer for 15 minutes or until heated through.
2Garnish with toppings.
