Low Carb Mexi Baked Chicken

Another personal South Beach Diet friendly favorite of mine. It's flavorful and easy to throw together, bakes in less than 1 hour. I serve this with a side of my Mexican Jumping Beans. For the taco seasoning, I like to make my own (no sugar added; there are plenty of taco seasoning Zaar recipes to choose from, if you would like to make your own.

"Easy and yummy to make! We took the idea of a reviewer earlier and put the chicken in for 15 minutes with only the seasoning on it and then put salsa on top and baked it for another 15 minutes. Original recipe makes 2
2 boneless skinless chicken breasts; (about 4 ounces each)
2 teaspoonstaco seasoning; (I prefer homemade with no sugar added)
1/2 cupsalsa; any degree (I prefer Newman's Own; it's low in sugar)
1/2 cuplow-fat cheddar cheese; shredded (I prefer the Mexi-blend

Low Carb Mexi Baked Chicken Preparation

1Preheat oven to 375 degrees.

2Spray a shallow, small baking dish with non-stick spray.

3Coat chicken lightly with taco seasoning, on both sides; spoon salsa over top of breast.

4Bake, uncovered, about 45 minutes.

5Sprinkle cheese on both breasts evenly; bake for another 5 minutes or until cheese is melted through.

Helpful idea: "..I used mild salsa, I flattened the chicken breasts sprinkled with taco seasoning and left in the fridge for an hour, I pan fried them until nearly cooked then popped the salsa and cheese on top and only did them for 7 minutes in the oven."

    I quadruple the recipe, use my own sugar-free taco spice blend, pat the chicken dry and roll in the spices. I agree that 50 minutes is probably too long for 4 oz breasts, but I use 6-7 oz breasts, so it works out about right. Also, I finish with sharp cheddar or sharp cheddar and pepper jack.

    I've been making this for a while and love it. For added flavor sprinkle the taco seasoning on the chicken and bake for about 15 minutes so the seasoning sticks to the chicken then add the salsa and finish baking

    This was very easy to make and it tasted great. Although it was a bit sweet which I think was due to the salsa brand I used. Next time I'll try a less sweeter salsa or make my own. Highly recommended.
