Combine all ingredients to make marinade. put in plastic bag (squeeze out air) and leave 3 hours or overnight. To cook take from bag and discard remaining sauce, bit more salt and pepper. Cook 15 to 25, till thickest part = 58 degrees, remove and wrap in foil for 10 minutes. Carve diagonally.
