Chicken in cajun spices sauteed with bell peppers and mushrooms and presented in a basil-cream sauce over linguine
"My husband took this meal down in minutes. I found this recipe after searching for something to make with my leftover chicken, mushrooms, and cream (had chicken marsala the night before). The flavor was excellent. I didn't have the bell peppers, basil, or linguine, so I used penne and went without the peppers. The Creole seasoning I had was perfect with the chicken, mushrooms, and penne. I sliced the chicken as others have and sauteed it in butter - it was very moist. This is now a favorite weeknight recipe."- cthornell
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente; drain
2. Place the chicken and the cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter or margarine until almost tender(5-7 minutes).
3. Add the red bell pepper, green bell pepper, mushrooms and green onion. Saute and stir for 2-3 minutes, and reduce heat.
4. Add the cream,basil,lemmon pepper,salt, garlic powder and black ground pepper. Add the cooked linguine, tossand heat through. Sprinkle with grated parmesan cheese.

Twydyelliott 1 week agoThis turned out pretty good. Everyone ate it. I didn't have Cajun seasoning so I used a New Orleans style seasoning I had. I may add a little red pepper or chilli pepper next time to add a little more spice. I finely chopped up some mushrooms and onions to go in the dish so the kids wouldn't see the veggies. I didn't have the bell peppers so I just added a can of chopped tomatoes. I would try it again.

bigfran 1 year agoPicture shows penne pasta, says 'linguini'. Amount of chicken to use is nebulous. My attempt turned out Very salty (Cajun spice is typically 12% RDA sodium). I will try again with penne, more chicken and less Cajun spice.

cjcammarata 2 years agoThis was amazing. My boyfriend and I loved it. We made a few changes like dicing up the chicken and adding some shredded mozzarella cheese. We will make this again. Yummy

DaynaDanielle 2 years agoExcellent! It's a very versatile recipe and I also added andouille sausage and a bit more Cajun seasonings to my liking. Easy to make and easy cleanup but most of all delicious.

Firstjohn48 3 years agoBe Advised- Do not add more Cajun seasoning as I did (ignorantly thinking the chicken need to be completely covered). It came out WAY TOO SALTY!
smithsuzanne 3 years agoI'm giving it 4 stars only because I interpreted the recipe to my suiting. I used olive oil to saute with (no mention of butter in the required list of items). I used much more cajun spice than mentioned and cut the chicken into small pieces. None of that was mentioned in the recipe. It was a very good recipe after making those few changes.
