An exceptional rice dish. I've never met a recipe that chipotle peppers didn't make remarkably better. Even my husband, who is a potato man, gave it a thumbs up!

I loved it! It was really easy to make and very delicious. I added some raw grated carrots in when I added the cilantro and it was a hit with the family.

This is delicious! I added more salt to taste and used Jasmine rice. Husband loved it as well. Served it with lime cilantro shrimp and sauteed asparagus. Yum!

Glad you liked the rice...its a great alternative to just plain white rice...we have Chipotle's right down the street, its one of our favorite places for fast food...they are so fresh...I was determined to get this copycat recipe....so glad you liked it.

This was good, but I keep serving chicken and I need a suggestion what else to serve it with? My children do not like seafood, do you think this will do for pork or beef?

I cannot believe how it tasted exactly like Chipotle's rice. Incredibly easy to make and compliments the Tequila Lime chicken dish. I added salsa fresca and shredded cheese and made a chicken bowl. AWESOME! Same bowl I order from Chipotle
