Original recipe makes 2
2 cupsunripe green papaya; sliced into thin and long sticks
6 cherry tomatoes
3 green long beans
2 smallred/green chillies (mild spicy)
2 clovesgarlic
2 tbspfish sauce
1 1/2 tbsplime juice
2 tsppalm sugar
1 tbsproasted peanut
2 tbspdried shrimps
Note: I normally also mix sliced carrot with green

Green Papaya Salad Preparation

Pound garlics, chillies, halved tomatoes, Long green beans in the mortar with pestle. Then add fish sauce, lime juice and palm sugar in the mortar. Ensure all are well-mixed. Add dried shrimps and sliced papaya (and carrot if prefered). Loosely pound (Do not mash). Use spoon to mix all ingredients well together and top the papaya salad with roasted peanut before serving.

Avoid roasted peanut if you are on diet. I normally mix sliced carrot wiht papaya as it gives a beautiful color display and also good balance of taste. For those prefering very spicy taste, you can add 2 more chillies. However key ingredients; fish sauce, lime juice and palm sugar must be balanced. [I posted this recipe.]
