Bring large pot of water to a boil.
Simmer beets and onion about 25 minutes until beets are tender.
Discard onion water and cut beets into 1/4-inch-thick slices and transfer to a large bowl.
Add the vinegar, lime juice, ginger, and oregano and toss gently.
Season to taste with pepper and serve warm or chilled.
