A variation on a cookie that we used to make in a bakery I worked in, years ago. Very yummy! These are made in the microwave oven, super easy.

Original recipe makes 36
2 cupsSugar
1/3 cupcocoa
1/3 cupmilk
1 stickbutter or margarine; (1/2 cup)
1 cupcreamy peanut butter
1 cupcoconut
2 1/2 cupsoats
1/2 teaspoonVanilla

Steffie's Chocolate Coconut No Bakes Preparation

Mix sugar and cocoa together in a large microwave safe bowl. Add butter and milk. Microwave on high for 3 minutes. Remove and stir thoroughly to remove any lumps. Return to microwave for 3 more minutes. Remove. Add peanut butter and vanilla and stir until peanut butter is melted and smooth. Stir in coconut and oats. Mix well. Drop by rounded tablespoons onto wax paper. You may want to smash them down just a bit. Cool at least one hour and enjoy.
