3 cupspotatoes; diced cooked
1 1/2 cupscheddar cheese; diced
3 Eggs; coarsely chopped hard-cooked
2 tablespoonsonion; finely chopped
2 tablespoonsgreen pepper; finely chopped
2 tablespoonspimiento; finely chopped
3/4 cupmayonnaise
1/4 cupsweet pickle relish
1 teaspoonsalt; (if desired)
1 teaspoonpepper
1 teaspoonVinegar

Cheese Potato Salad Preparation

In a medium bowl, combine potatoes, cheese and eggs. Toss lightly to mix. In a small bowl, blend remaining ingredients. Pour mayonnaise dressing over potato-cheese mixture and toss lightly to coat well. Cover and chill.
