| 1 8-oz packagebaby portabella mushrooms; sliced |
| 1 boxziti pasta or your fav pasta |
| 6 clovesgarlic; chopped |
| 1/4 cuponion; chopped |
| 1/4 cupFRESH basil; chopped |
| 2 tablespoonsdried oregano |
| 1 14.5-oz cantomatoes in sauce; diced |
| 1/4 cupheavy cream |
| 1/3 cupparmesan cheese |
| 3 tablespoonsVodka |
| 2 tablespoonsolive oil |
| 2 tablespoonsbutter |
| 1 Salt |
| 1 Pepper |
Chicken N mushroom w/Vodka Cream Sauce Preparation
Saute salt and peppered chicken in a large sauce pan ~large enough that you will eventually add all ingredients~ WITH the olive oil and the butter. Saute at medium heat, not to burn the butter while cooking.
Meanwhile, chop garlic, onion and basil; remove chicken from pan; IF need, add a lil more butter and olive oil: add garlic, onion, basil, oregano and cook until tender ~approx. 3 mins~; add all the mushrooms...cook for about 4 mins; ADD VODKA; reduce then add can of tomatoes with the reduced heat; ~Low to medium heat~
Add the chicken tenders in whole OR cut into bite size. Low heat, simmer for about a half hour; Meanwhile, cook ziti or your favorite pasta in large pot until el-donte; drain. Increase the heat of the sauted chicken & mushrooms, add the cream, parmesan, salt and pepper to taste, simmer for about 4 mins then toss the pasta in; turn heat off.....and serve with your favorite salad!
