This is great

"Tasted Great!!! However, I like my sauce a little thinner, so I added 1/2 cup of chicken broth and 1/2 cup of diced tomatoes. Also, I'm lazy, I used 1 1/2 (14.5oz) cans of diced tomatoes for regular version ." - aldrichmh

Southwest Penne Pasta With Meat sauce Preparation

Brown the beef and drain off the extra oil.

In a skillet over medium heat, pour 1 tbsp of olive oil and then add the onions.

After the onions are golden brown, stir in 1 tsp ground cumin.

Next, stir in the tomatoes.

After the tomatoes become soft, add the browned beef.

Stir in the remaining cumin and then add the tomato paste, chicken broth, and worcestershire sauce.

Add salt and pepper to taste.

Cook for about 10-12 mins on medium heat or till the sauce has thickened. (This depends on how much sauce you like on your pasta).

Add the chopped bell peppers about 5 minutes before you are ready to take the beef off the stove.

Boil the pasta.

Drain the pasta and serve on a platter with the meat sauce on top of the pasta.

Garnish with cilantro and Parmasean Cheese

Serve with a bottle of your favorite red wine.

This was excellent. My boyfriend absolutely loved it. Will definitely make it again.

I also added a little cayenne just because I like my food pretty spicy.

This was great, loved the hint of cumin. I actually added a bit more and a ts of chile powder. I love how the peppers are not overcooked. Awesome.
