I was craving Tuna, but not just plain tuna, I wanted something different, more flavorful. So this was lunch today. Rinsing the Tuna takes away some of the fishy taste.

Original recipe makes 2
1 cantuna; large, rinsed and drain
1 tablespoonSweet relish; (optional)
1 tablespoonMayo; (I use light)
1 lemon; Juice; of half small
1 teaspoonsweet and spicy chopped peppers; (I get mine at the dollar store)
Salt; just a little
Pepper; ; generous amount
2 piecesquality wheat bread; toasted
1 smalltomato; cut into 8 thin slices
2 tablespoonsProvolone cheese

Tasty Tuna Melt Preparation

Toast your bread, layer toast with tuna, press it down, tomatoes, then cheese. I used a toaster oven and watched it carefully, but you can use a broiler as well, just keep and eye on it.
