If you like pork strips, celery and onion this recipe is great made with the Cream of Celery Soup.
PREP/COOK TIME: 25 min
Slice the pork into thin strips.
Heat a medium skillet with 1 tbsp of olive oil. Add the pork and cook until browned, stirring often. Remove pork from pan and set aside.
In the same skillet heat the remaining oil. Add celery, thyme and onion and cook until tender, stirring often.
Add soup and water and heat to a boil. Return the pork to the skillet and heat through.
Serve over hot cooked rice.
