| 1 cupboiling water |
| 1/2 cupsun-dried tomatoes; packed without oil |
| 1/2 cupketchup |
| 1 cupseasoned bread crumbs |
| 3/4 cupfinely onion; finely chopped |
| 3/4 cupfresh basil; chopped |
| 1/2 cupsharp provolone; shredded |
| 2 largeegg whites |
| 2 clovesgarlic; minced |
| 2 pounds90% lean ground beef |
| 1 Cooking Spray |
| 1/3 cupKetchup |
Italian Meat Loaf (Monique) Preparation
Combine boiling water and tomatoes in a bowl, let stand 30 minutes or until soft. Drain and finely chop tomatoes. Heat oven to 350 degrees. Combine chopped tomatoes, 1/2 cup ketchup and next 7 ingredients in a large bowl. Shape meta mixture into a 9 by 5-inch loaf on a broil pan coated with cooking spray. Spread 1/3 cup ketchup over meatloaf. Bake at 350 degrees for 1 hour or until thermometer registers 160 degrees. Let stand 10 minutes before slicing. Cut into 12 slices. Serve with your favorite mashed potato recipe.
