In a skillet, brown chicken in oil; pour off fat. Add broth, tomatoes, onions, garlic, salt, turmeric, pepper, crushed red pepper (if desired) and bay leaf.
Cover; cook over a low heat 15 minutes. Add remaining ingredients.
Cover; cook 30 minutes more or until chicken and rice are tender; stir occasionally.
Remove bay leaf & serve.
I keep a number of hot sauces on hand and sprinkle on to the plated dish liberally at tableside. My favorite on this dish is a fantastic sauce from Costa Rica called "Lizano Sauce". Choose your own hot sauce and make this dish your own!

Mattdylan 3 days 16 hours agoThis dish was absolutely delicious! The whole family enjoyed it. The only thing I did differently was doubled the amount of ingredients bc I have a large family and used one can of regular diced tomatoes and one can of zesty jalapeño diced tomatoes. Perfect little zip!

MauraSpeckt 8 months agoThis is a wonderfully simple and great recipe! It is so delicious that there is never any left unless I double it. The kids and husband love it, it is on my family dinner rotation and served to company too!
Tempor 10 months agoMy kids loved it and all gave it 5 stars. I had to leave out the peas as they are not too keen on them but I added them into my serve and it tasted great.

Ange325 1 year agoYummy! I used 2 cups of jasmine rice, 1 and 3/4 cans of chicken broth, and lots more salt and pepper. I used chicken breast and seasoned it first.

Ajkingsley 1 year agoThis was excellent. I used beef broth because it's all I had on hand. Added red chilli flakes and some cayenne pepper. Topped off with chives. Left out peas. None on hand. Very tasty. Easy. Jasmine rice.
