Lomo Saltado is a dish that is part stir-fry (inspired by the Chinese food, as there are many Chinese restaurants called "chifas" in Peru thanks to a large population of Asian immigrants) and part traditional.

Original recipe makes 4 Servings
1 1/8 poundssirloin steak
Salt
pepper
cumin
1 teaspoonpimenton; (Spanish Paprika)
1/2 teaspoonoregano
2 onions; cut in strips lengthwise
1 cloveGarlic; minced
1 jalapeno pepper; cut in fine strips
2 tablespoonsvinegar
2 tomatoes; quartered
1 tablespoonparsley
1 1/8 poundspotatoes; cut into strips
Oil; as needed

Lomo Saltado (South American Stir-Fried Steak & French Fries) Preparation

Heat 4 tablespoons oil in pan.

Cut meat into approximately 2 1/2 cm x 1 cm pieces and panfry. Season with salt, pepper, and cumin. Mix in pimenton and oregano.

Remove meat from pan and put aside.

Combine onions, garlic, pepper and vinegar, cook for several minutes. Add tomatoes and mix well. Return meat to pan and sprinkle with parsley.

Fry the potatoes in hot oil.

Serve dish with the french fries and some white rice.
