Papa a la Huancaina is a cold entree, a key dish of Criollan food (the food from Lima) and one of the most beloved. It is basically cooked potatoes served with a cream made with cheese and aji.

Original recipe makes 6 Servings
1 smallonion; Thinly sliced/ringed
3 tablespoonslemon juice
1/2 teaspoonSalt
1/8 teaspoonground red pepper
1 1/2 poundsnew potatoes
6 ouncesCream Cheese; softnd/in 1/2" cubes
1/2 cuphalf and half
2 smallSerrano Peppers; seeded and chopped
1/4 teaspoonSalt
1/4 teaspoonGround Turmeric
1 cupBibb Lettuce; leaves
12 Greek olives
3 Eggs; hard-boiled; peeled and cut into fourths

Papas a la Huancaina (Cheese & Potato Salad) Preparation

Mix onion, lemon juice, 1/2 tsp. salt and the red pepper; cover and reserve.

Heat 1" salted water (1 tsp. salt to 1 cup water) to boiling. Add potatoes. Heat to boiling; reduce heat. Cover and cook till tender, 20 to 25 minutes; drain and cool. Pare potatoes; cut into fourths. Heat cream cheese, half and half, chilies, 1/4 tsp. salt and the turmeric over low heat, stirring frequently, till mixture is smooth, 10 to 12 minutes. Arrange potatoes on lettuce leaves. Spoon cheese mixture over potatoes. Drain onion; arrange on cheese and potatoes.
