Chicken With Spinach and Mushroom Sauce

A recipe that was made up one night when the fridge was empty and became a huge family hit!
"This is delicious. It includes all of my favourite ingredients. If I don't have mushroom soup in my cupboard, I happily use cream and homemade chicken stock (which I keep in the freezer). It's lovely with cubed saute potatoes or veggie rice too."

Ingredients
| 2 tablespoons ofButter |
| 2 Boneless Skinless Chicken Breasts; (up to 4) |
| 1 canCream of Mushroom Soup |
| 1 10.75-oz canChicken Broth |
| 1 cupMushrooms; Sliced, (Fresh or Canned) |
| 1 cupSpinach; (Fresh) or 3 Tablespoons canned |
| 1 cupEgg Noodles; (up to 2 cups) |
| Salt and Pepper; to taste |
Chicken With Spinach and Mushroom Sauce Preparation
Slice Chicken into thin strips or bite size pieces. Season with Salt and Pepper.
In a large saucepan add butter and bring to medium heat. Add chicken and cook lightly until browned.
Add mushrooms and spinach.
Add Cream of Mushroom soup and Chicken Broth.
Salt and Pepper to taste.
Stir and combine well. Reduce heat and let simmer for 10-15 minutes.
Prepare egg noodles as directed on Package.
