This is a great and hearty soup that always makes me feel better on those sick rainy days.

"Very tasty! I doubled everything since I used 12 chicken thighs. I still put 1/2 cup of lemon juice instead of doubling it and I added cabbage. Next time I'll omit cabbage & add corn on cob. I'm not much of a soup cook but this came out great! " - Jesca91

6 Chicken Thighs
1 mediumYellow Onion
1/4 teaspoonOregano
1/4 teaspoonSaffron
6 cups ofWater
2 clovesgarlic
1 cubeChicken Bouillon
2 Potatoes
1 mediumCarrot
1/2 cupLemon juice
1 teaspoonSalt
1/2 teaspoonPepper
1 tablespoonTomato Paste

Sopa De Pollo (Cuban Style Chicken Soup) Preparation

Remove skin from chicken thighs and lightly salt. In large pot add water, chicken, tomato paste, onion, bouillon, garlic, and oregano. Bring to a boil then reduce heat to low/Med. let simmer for 30 minutes. Add potatoes and carrots cover for another 30 minutes add saffron, lemon juice, and salt & pepper.

You can add noodles if you like

Notes

If you don't have saffron you can use one one packet for Sazon Goya with Culantro and Annato.

I was so excited to make this soup. But I was really disappointed. I love Lemon but 1/2 cup of lemon was way too much. I taste nothing but lemon juice when eating this. Was it suppose to be that way? It over powered everything else. So the Spices were lacking. I am not really a cook. But I would say it needs at least 3 bouillon cubes. Possibly double the pepper, salt, garlic, saffron. Possibly take down the lemon to 3 TB I will try these changes next time. I give it 3 stars because the portion size of water, carrots, potatoes and chicken are balanced pretty good. Although I would modify the instructions on the potato size. I used 3 small potatoes not sure what size potato to use. The instructions on how to cook are pretty good. Although didn't say when you should de-bone the chicken. I cooked in bone the entire time hoping it would add more flavor.

Very good soup...i didn't have carrots, so i added a sweet potato, corn on the cob and some green onions at the end...thank you, Jersey :)

Excellent. Easy to make and tasty. I find soup is better the next day, so I always make it the night before. I also like to add sweet potatoes and sometimes ripe plantains :-) It's the Cuban in me!
