Carne Con Papa (Cuban Beef Stew)

This hearty beef stew is usually served over rice but can be enjoyed alone as well.

Original recipe makes 4
3 Potatoes; (Peeled and Largely diced)
1/2 poundbeef cubes for stew; (or cube your favorite steak)
1/4 white Onion
1/4 Green Pepper
2 tablespoonsGarlic Powder
1 tablespoonOregano
8 oz.Tomato Sauce
1 packetSazon Goya
4 oz.Dry White Cooking Wine
10 oz.Water
1 Bay Leaf
Salt and Pepper; to taste

Carne Con Papa (Cuban Beef Stew) Preparation

Combine all ingredients in a pressure cooker.

Cook on Medium heat for 20 Minutes or until the pressure cooker begins to steam.

Let steam out and serve over white rice.

t can also be made in a large pot on Med/High heat for approx. 1 hour.

you can also add fresh tomatoes towards the end or carrots.

I think adding pink beans or acorn squash to this, either with or in place of the potatoes, would be great.

Neither my husband nor I enjoyed this. It had a one-dimensional flavor (maybe it calls for too much oregano?) and wasn't at all spicy. It was also very watery, though that may be because I slow-cooked it.
