Ingredients

125 grams unsalted butter; softened
3/4 cup raw caster sugar
3 teaspoons pure vanilla extract
2 Eggs; at room temperature, beaten lightly
3/4 cup sour cream
1 cup very ripe banana; mashed
2 1/4 cups self-raising flour
1/4 teaspoon bicarbonate of soda
1 pinch salt
1 tub cream cheese
Icing Sugar; to taste
Orange Rind; ground, to taste
Orange Essence; to taste

Preparation

Preheat oven to 180°C. Grease base and sides of a 7cm deep, 19cm square cake pan.Using an electric mixer, beat butter, sugar and vanilla until pale. Add the eggs, beating well after each. Combine together with sour cream and bananas. Sift the flour and bicarb of soda over batter and gently fold through. Spoon batter into cake pan. Smooth surface. Bake for 50 to 60 minutes. Let cake stand for 10 minutes before transferring to a wire cooling rack.To make icing; combine everything together with electric beaters. Wait until cake has completely cooled before icing/frosting.

The biggest thing is to make sure you use VERY ripe bananas. Also use full fat sour cream and cream cheese. Keep an eye on the cooking time as ovens vary in temperature. [I posted this recipe.]
