This is one of my favortie sauces. I always get the same thing when i eat here, their Enchilada''s.

Original recipe makes 4
2 tbspvegetable oil
2 tbspflour
1/4 cupred chile powder; mild
2 cupsbeef broth; fresh or canned
2 cupstomato puree; canned
1/2 tsporegano; dried
1/4 tspcumin
1/2 tspgranulated garlic
1 tspsalt; (to taste)

El Torito's Enchilada Sauce Preparation

Heat oil in large saucepan. Add the flour to the oil and make a roux.

Stir and cook over medium heat for 2 minutes until it becomes brown

in color. Add the chile powder, beef broth, tomato puree, oregano,

cumin, garlic and salt to the roux and simmer over low heat for

15 minutes.

    I'm going to try this, but I have to make it with chicken broth because would you believe it, beef broth is one thing I can't buy here for love or money. I guess I could just boil some beef?
