Delicious crowd pleaser that is open to many variations. This is my #1 "off-the-cuff" main dish.

Original recipe makes 4
4 chicken breasts
1 pintMilk
1 egg
2 cupsBread crumbs
4 tbspParmesan cheese
8 slicesham or prosciutto
8 slicesSwiss cheese
1 onion
4 clovesgarlic
2 big hanfulsbaby spinach
1 cupmushrooms; diced
1 tbspOlive oil
1 tspSalt and pepper and/or your favorite herbs

Stuffed Chicken Breasts with Spinach and Mushrroms Preparation

You need 3 bowls and a baking pan.

Coat the baking pan with olive oil.

Put the milk in a bowl and mix in the egg..

Chop up the onion, spinach and mushrooms. Mash up the garlic cloves and mix in with the vegetables in a another bowl.

Mix the Parmesan cheese, breadcrumbs, salt, pepper and herbs together in a bowl.

Flatten the chicken breasts. Pound them lightly with a bottle or mallet. Best if you wrap them in plastic first.

Put them in a bowl of milk and let them soak a little while..

Dip the chicken breasts in the breadcrumbs.

Layer the ham and then the cheese over the breaded chicken breasts.

Take a handful of the vegetables and wrap the chicken breast around it. Place the stuffed chicken breasts in the baking pan.

Bake at 385 F. for 45 min.

    The picture does not belong wth this recipe as it is very deceiving...there is not a sauce with this dish as it is written. The recipe itself is confusing, I wasn't sure if I should add the leftover milk in order to make a sauce or if the cheese was going to create this.

    An easy to make, tasty, midweek meal. I used prosciutto and wild mushrooms. Loved the spinach and will probably use even more next time. A great recipe!
