This is a great side dish with any fresh fish especially in the summer.

"Great recipe. Next time I will add more lime juice. I did 2 c of water to 1 c rice. I also added a half of can of zesty tomatoes (they had jalapenos with them) for extra spice and vegetable. I served it with Pepper Rubbed Pork chops topped with guacamole and it was a fabulous dinner. I see where this could go with many latin dishes in our future. Thanks for the recipe." - Arvan43

.5 teaspoonCooking oil

Refreshing Cilantro Lime Rice Preparation

In rice cooker or pot combine all ingredients except cilantro and allow the rice to cook completely.

After the rice is cooked while still warm and fresh cilantro and combine well.

If you would like to make a larger batch add 1 teaspoon lime juice for ever 1/2 Cup of rice.

These measurements look off? Most recipes call for 2 cups of water to 1 cup of rice. Also the oil/salt quantities look flipped: 1 Tbsp oil and 1/2 tsp salt seems more appropriate. With these adjustments this recipe turned out awesome!

I made this tonight to go along side salmon patties. I liked the flavor but found the rice a bit dry. I had made the rice in my rice cooker...I did add the lime juice and salt to the rice cooker. Hubby topped his with butter and said it was good.

Don't see seven cups of water in recipe as mentioned. Two h20 to 1 rice might be better. Also would add grated lime rind to rice for more intense flavour. 1 tblsp salt is too high...1 tsp or none at all would better.

I think the recipe's measurements are quite off. I'm using jasmine rice and for 1 cup of rice, I use about 2-2.5 cups of water... not 7 cups. And the amount of salt is waaaaay to high. After my own tweeks, I was able to make this recipe work.
