An easy party appetizer or light dinner. You can also eliminate the Jalapeno for a kid-friendly meal. Optionally add chopped white onion in the quesadilla.

| 2 largewhite flour tortillas |
| 1 tablespoonsVegetable oil |
| 0.5 earWhite Corn; cut fresh from the cob |
| 1 tablespooncilantro |
| 0.5 cupMonterey Jack Cheese |
| 2 tablespoonsjalapenos; finely diced |
| 2 lime; wedged |
| 1 dollupSour Cream; optional |
Corn, Jalapeno and Cilantro Quesadillas Preparation
Pre-cook the corn: In a microwave-safe container, add the corn and a tablespoon of water. Cook on high for a minute. Remove and let cool.
Heat vegetable oil on medium low in a large skillet. Add one tortilla, and top with half the cheese, corn, jalapenos and finely chopped cilantro, and then, the rest of the cheese. Top immediately with the other tortilla. Cook until the cheese melts, usually 1-3 minutes. Flip carefully over to finish on the other side for a minute or two.
