This is how we like to use up leftover broiled or grilled salmon and sometimes leftover steamed vegetables as well.

1 unbaked pie shell
1 cupgrilled or broiled salmon; or more leftover
1/2 cupbroccoli or asparagus; or more steamed or boiled
1 mediumonion; thinly sliced
1 tspolive oil
4 Eggs; beaten
1/2 cupmilk
1 dashcayenne pepper
1 cupcheese; grated

Salmon Quiche Preparation

Pre-heat oven to 450° F .

Bake pie shell 5 - 10 minutes until very light brown; prick if the shell starts to puff up.

Remove from oven and reduce heat to 325° F.

Meanwhile, sauté the onions in the olive oil. Let cool.

Place the onion, salmon and green vegetables evenly over the bottom of the pie shell. Sprinkle cheese on, reserve a handful.

Mix eggs, milk and pepper and pour over the ingredients in the pie shell. Sprinkle remaining cheese on top.

Bake in the oven for 45 - 50 minutes until egg is set.

Let stand for 10 minutes before serving.
