this is what i came up with for dinner when i dint have any chicken to make chicken lettuce cups, but i did have some lean ground beef, this turned out really tastey, serve it with a few different sauces, i like Sweet dipping sauce.

Cook the beef, onion, garlic till almost done and drain meat, put back in skillet, and chop the meat finely with masher or spatchula, or use hand mixer, add the mushrooms, celery, carrots, onion, hoisin sauce, soy sauce, sesame oil, chopped peanuts, white pepper. Wash and dry, your romaine leaves, break of the white thick end of it and place the leaves in a circle on a nice platter, drop mixture by large table spoons onto your lettuce cups, and serve.
You may serve this as an entree or as an appetizer. Also, you may use a can of chopped water chestnuts instead of celery, but thats all i had was the celery.

Jnp809 10 months agoPretty good. Used sesame chili oil to give it a kick. Wish we had not used romaine lettuce the texture was not right and hard to cup. Nice recipe to use up all of your leftover veggies in
