don't spend all day slaving over the stove to make mole, here is a recipe to make it in a crock pot.

"I really liked the flavors in this! And that was skimping a bit on the chili powder and peanut butter for my kids' palates. I also subbed dried cranberries for raisins because that's what I had on hand. Using the blender produced a smooth sauce, and after the chocolate tablets melted in the crockpot, I just threw in the chicken and let it go! Original recipe makes 4
1 wholechicken; 3-5 pounds, cleaned and giblets/neck discarded
1 cantomato paste
1 tbspchicken base
0.5 cupbrown sugar
1 canchicken broth
2 Mexican Chocolate Tablet
0.25 cupChili powder
2 tbspground cumin
2 tbspground cinnamon
4 tbspcreamy peanut butter
1 teaspoonSalt
3 clovesGarlic; chopped
0.25 cupRasins; blended in food processor

Crockpot Chicken Mole Preparation

I Place all my ingreidents except the chicken, and chocolate in a blender.

Place all ingredients including chocolate, except chicken into your crock pot. Mix well while heating on high. After chocolate is mostly melted add your chicken. Cover and cook the entire day, or at least 5 hours on high or 9 hours on low. Check,salt more if necessary, .

To serve, strain sauce and retain. Pull chicken off the bone.

Serve with warm tortillas, make burritos and serve with cheese and sour cream. You can also serve this over white rice.

Notes

I used 3 different chile powders, i used california chile powder, arbol, and ancho, you may use any you like, i like the flavor of all of them and i use the crunchy peanut butter so that it has a nut taste to it, and if your really wantin to get the flavors of mole, burn slightly a corn tortilla and throw it in the blender for extra flavors of Oaxaca.

    Excellent recipe. And in response to a previous review, mole varies tremendously by region, and some regions DO use garlic as a flavoring.

    Mole doesn't have garlic, comino . It n Has 3 to 4 different pepper . Come on people write an actual recipe don't destroy gastronomy like that
