Mama Rita's Simple Shepherd's Pie

A recipe I learned from my late mother-in-law, Rita, when I first met my husband. It's simply "comfort" food! I can serve this to my family and their friends and you would have thought I served them a roast. The appeal...it speaks about old times and family meals and sitting around the dining table. If you are creative, you can make your own variations. I do not add salt because the gravy mix provides all the seasoning.

2 packagebrown gravy
1/2 cupWater
10 largepotatoes; make into mashed potatoes or
3 cupsleftover mashed potatoes
3 cupsOR instant mashed potatoes
16 bagfrozen corn or mixed vegetables
1 stickbutter; sliced into pats
1 canFrench fried onions; (optional)

Mama Rita's Simple Shepherd's Pie Preparation

Preheat oven to 350 degrees. In advance, peel and boil the potatoes and make mashed potatoes, or use leftover mashed potatoes or instant mashed potatoes (make according to package directions); set aside. Cook vegetables according to package directions and set aside. In a skillet, brown ground beef then sprinkle brown gravy mix over ground beef and no more than 1/2 cup of water just to thicken the gravy and make the ground beef a little moist - do not make ground beef soupy. After ground beef has browned, evenly layer ground beef in a rectangular 9x13 casserole or baking dish; then evenly layer the cooked vegetables atop the ground beef; finally, spread the mashed potatoes carefully (I use a rubber spatula) over the vegetable layer until completely covered. Sprinkle the French fried onions atop the mashed potatoes (optional), or arrange the pats of butter atop the potatoes if you do not use the onions. Bake the Shepherds Pie for approximately 30 minutes, just to heat all the ingredients through. Complete meal in a dish.

Love this recipe, but I gave it my own twist. I browned ground turkey in the microwave, raking it with a fork to make it 'crumbled'. I added various seasonings, Allspice, Mrs. Dash, Cayenne Pepper, Worchestershire sauce, and a bit of chicken gravy mix. It made a moist, almost soup like mix, but with a kick. Then added canned diced tomatoes, corn, and peas. Put it in a 13x9 baking pan, and baked this by itself for 30 minutes to add a little 'firmness' before adding the mashed potato layer, and put a little bit of cheese on top.With more cheese on the side to top off. My husband is out harvesting...and this is not a fussy dish, we can leave it in the oven for whenever he gets home! Musicwish :o)

There are other variations you can experiment with. A friend mixed in a little bit of canned corned beef into the mashed potatoes before spreading it and instead of using vegetables, layered thinly sliced tomatoes and cheddar cheese atop the ground beef, then the potatoes and baked it - almost like a hamburger pie with a twist!
